Barbecue Time! Dijon Fish Steaks

On hot summer nights, sometimes it's nice to enjoy a lighter meal with a glass of white wine...but still be able to light up the bbq. For those fish lovers out there, here's an excellent recipe that you and your guests will enjoy.
  • 14 oz clear chicken broth
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard.
  • a hint of pepper
  • 6 salmon or swordfish steaks, about 1 inch thick.
Mix all ingredients except fish, and then marinade fish for an hour with this mixture. Turn the fish several times during the hour. Grill over medium heat, 5 minutes per side or until fish flakes easily. Use the extra marinade to brush on fish while grilling. Top with lemon slices or basil if desired. Complimentary sides could be white rice, asparagus steamed in white wine, and mixed fruit with yogurt or a little sugar mixed in. And as for that wine I mentioned in the beginning (the most important part!)...most guests will enjoy a simple Chardonnay with their meal. But don't be afraid to go with a chilled Muscat dessert wine with your dinner. Dessert wines aren't just for dessert!
